Ingredients

Salt, as needed
12 oz. wide or extra-wide egg noodles
4 Tbsp. unsalted butter
1 yellow onion, finely chopped
8 oz. button or cremini mushrooms, thinly sliced
1/4 cup all-purpose flour
1 cup whole milk
4 oz. cream cheese
1 Tbsp. vegetable bouillon paste
1 tsp. fresh thyme leaves
1 tsp. garlic powder
2 cups water
2 cans, 5 oz. each, water-packed tuna, drained and flaked
1 cup frozen peas
8 oz. sharp cheddar, grated and divided
Freshly ground black pepper, as needed
1 1/4 cups crushed plain biscuits

Instructions

1. Preheat the oven to 400°F and position a rack in the center. Bring a large saucepan of salted water to a boil.
2. Cook the egg noodles according to the package directions until they are just tender. Avoid cooking them too long because they will continue softening in the oven. Drain thoroughly and set aside.
3. Return the same saucepan to the stove over medium-high heat. Melt the butter, then add the chopped onion and sliced mushrooms. Season lightly with salt and cook until the vegetables become tender and most of the moisture from the mushrooms has disappeared.
4. Sprinkle the flour over the vegetables and stir continuously for about 1 to 2 minutes. This creates the base for the creamy sauce and helps prevent a floury taste.
5. Slowly add the milk and water while stirring. Mix in the cream cheese, vegetable bouillon paste, thyme, and garlic powder. Bring the mixture to a gentle boil, then lower the heat and simmer for several minutes. Continue stirring until the sauce becomes noticeably thicker.
6. Remove the saucepan from the heat. Add the cooked noodles, tuna, frozen peas, and half of the grated cheddar. Stir gently until everything is evenly coated with the sauce. Taste and adjust the seasoning with salt and black pepper.
7. Transfer the mixture to a large baking dish. Spread it into an even layer, then sprinkle the remaining cheddar across the top.
8. Finish with an even layer of crushed plain biscuits. Place the dish in the oven and bake for approximately 20 to 25 minutes, or until the sauce is bubbling and the topping is lightly browned.
