A homemade lemon pound cake is a lovely choice when you want something sweet with a fresh citrus flavor. This vegan version combines lemon zest, fresh juice, and a tender crumb, finished with a simple lemon icing and juicy blackberries.
Serve it as an afternoon treat, a light dessert, or a centerpiece for a relaxed gathering.

Ingredients

For the cake:
140 g caster sugar
Zest of 2 lemons
240 ml soy milk
2 tablespoons fresh lemon juice
110 ml neutral vegetable oil
1 teaspoon vanilla extract
220 g plain flour
⅓ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 tablespoon cornflour
¼ teaspoon turmeric powder, optional
For the lemon icing:
150 g icing sugar
Zest and juice of 1 lemon
1–2 teaspoons warm water, if needed
To serve:
150 g fresh blackberries
Preparation time: 15 minutes
Baking time: 25–35 minutes
Servings: 10–12 pieces

Instructions

1. Prepare the oven and pan. Heat the oven to 180°C, or 160°C for a fan-assisted oven. Lightly grease a square baking tin of approximately 23 cm and line it with baking paper.
2. Mix the lemon sugar. Place the caster sugar in a large bowl. Add the zest of two lemons and rub it into the sugar with your fingertips. This releases the citrus oils and spreads the fragrance throughout the mixture.
3. Prepare the soy milk. Pour the soy milk into another bowl and stir in two tablespoons of lemon juice. Leave it for two to three minutes. It may thicken slightly as the citrus reacts with the milk.
4. Combine the wet ingredients. Add the lemon-sugar mixture to the soy milk. Pour in the vegetable oil and vanilla extract, then whisk until everything is evenly combined.
5. Mix the dry ingredients. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cornflour, and optional turmeric. Distributing the raising agents evenly helps the cake bake consistently.
6. Make the batter. Add the dry ingredients to the wet mixture in two batches. Fold gently with a spatula until the batter looks smooth and no dry flour remains. Avoid excessive mixing, which can make the finished cake dense.
7. Bake the cake. Pour the batter into the prepared tin and level the surface. Place it in the oven, then reduce the temperature to 160°C. Bake for approximately 25–35 minutes, checking toward the end. A skewer inserted into the center should come out without wet batter.
8. Cool completely. Leave the cake in its tin for around 10 minutes before transferring it to a wire rack. Allow it to cool fully before adding the icing, otherwise the topping may melt and slide off.
9. Prepare the icing. Sift the icing sugar into a bowl. Add lemon juice gradually, stirring until a thick but spreadable consistency forms. Mix in the lemon zest. Add a little warm water only when needed to loosen the mixture.
10. Decorate and serve. Spread the icing over the cooled cake. Allow it to settle, then cut the cake into portions and arrange fresh blackberries on top or alongside each slice.

Tips for a Tender Cake

Measure the flour accurately, as too much can make the crumb dry. Use finely grated lemon zest and avoid the bitter white layer beneath the peel. Fold the batter only until combined, and check the cake before the maximum baking time because ovens vary.
For a stronger citrus finish, add a little extra lemon zest to the icing rather than too much juice, which can make the topping runny. Choose firm, fresh blackberries and add them shortly before serving for the best appearance.

Serving and Storage

The cake tastes delicious on its own, but it also pairs well with extra berries or a spoonful of plant-based yogurt. Store leftovers in an airtight container in the refrigerator for up to three days. Bring slices closer to room temperature before serving for a softer texture. The uniced cake can also be wrapped well and frozen for later enjoyment.
This vegan lemon pound cake keeps things simple with fragrant citrus, a soft crumb, and a smooth lemon topping. Fresh blackberries add color and a fruity contrast without taking attention away from the main flavor. With straightforward preparation and familiar ingredients, it is a practical homemade dessert for sharing or enjoying one slice at a time.
