Crock Mac & Cheese is an easy way to prepare a rich, creamy pasta dish without spending much time stirring at the stove. The recipe combines tender macaroni with evaporated milk, cream cheese, cheddar, Gruyère, and mozzarella for a smooth, cheesy texture.
A seasoned panko topping adds a little crunch to every serving. With most of the cooking handled by the slow cooker, this recipe works well for family dinners, casual gatherings, or whenever a comforting meal is needed.

16 oz. large elbow or corkscrew pasta
12 oz. evaporated milk
1 cup half-and-half
3/4 cup whole milk
6 oz. cream cheese, softened and cut into pieces
5 Tbsp. unsalted butter, divided
1 1/2 tsp. dry mustard powder
3/4 tsp. garlic powder
1/8 tsp. ground nutmeg
Freshly ground black pepper, as needed
3 cups shredded sharp cheddar
1 cup shredded Gruyère
1 cup shredded mozzarella
1/3 cup sour cream
For the topping:
1 cup panko breadcrumbs
1 tsp. dried parsley
1 tsp. garlic powder
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 Tbsp. unsalted butter
Preparation time: 10 minutes
Total time: about 1 hour 45 minutes

Instructions
1. Bring a large saucepan of salted water to a boil. Add the pasta and cook it for about 3 to 4 minutes less than the shortest cooking time suggested on the package. The noodles should remain firm because they will continue cooking later. Drain thoroughly.
2. Lightly coat the inside of a large slow cooker with cooking spray. Add the drained pasta, evaporated milk, half-and-half, whole milk, cream cheese, 4 tablespoons of butter, dry mustard, garlic powder, and nutmeg. Season with salt and black pepper, then stir gently to distribute the ingredients.
3. Cover and cook on Low for about 1 hour. Stir the mixture once halfway through cooking. After an hour, check the pasta. If it is still too firm, continue cooking and check every 15 minutes until it reaches a tender texture.
4. Add the shredded cheddar, Gruyère, mozzarella, and sour cream. Stir thoroughly so the cheeses begin to melt throughout the pasta.
5. Cover again and cook on Low for another 8 to 10 minutes. Stir once the cheese has melted, making sure the sauce is evenly distributed and creamy. Taste and adjust the seasoning if needed.
6. While the macaroni cooks, prepare the topping. Combine the panko breadcrumbs, dried parsley, garlic powder, salt, and black pepper in a small bowl.
7. Melt the remaining tablespoon of butter in a skillet over medium heat. Add the seasoned panko and cook for about 2 to 3 minutes, stirring frequently, until the crumbs become lightly golden.
8. Spoon the finished macaroni and cheese into serving bowls and scatter the toasted panko mixture over the top. Serve while warm.
